Our favorite ways to eat lamb

Grilled lamb chops

K.I.S.S. Grill lamb chops like you would any other steak. Pat dry, brush with olive oil, salt and pepper, and grill. Just don't overdue it because the lean meat will toughen faster than beef. We like to take them to 145, let them rest off heat for 5 minutes, and serve with garlic mashed potatoes and green beans.

Lamb barbacoa (slow cooker)

A great way to cook lamb roasts. If you like barbacoa at Chipotle, you'll love these. Serve with your favorite taco fixings. We like them with cilantro rice and flour tortillas.

Lamb brats

K.I.S.S. Grill lamb brats just like any other brat or hot dog. Like to boil your brats in beer? Go ahead, but its not necessary. Grilled brats, a bag of potatoes chips, and baked beans make an easy, kid friendly, summer evening meal.

Gyros

Or as our kids call it, lamb bacon. Another quick meal option, just fry gyro meat with onions and peppers. Spread Tzatziki sauce on pitas (both available at most grocery stores), add the grilled gyro meat, onions, and peppers, roll up enjoy.
